Basic No-Egg Muffin Recipe

muffinsMuffins are something all my children will eat, even when you put vegetables in them.  Long ago I experimented and experimented until I got a good basic recipe that we vary by the fruit/vegetable and spices we add.  We always double this.  Have fun with it!

Ingredients:

  • 2 c. flour
  • 2 tsp baking powder
  • 1/4 tsp. salt
  • 2/3 c. sugar
  • 1 handful oatmeal
  • 3/4 c. water
  • 1/4 c. oil
  • 1 c. fruit plus appropriate spices

Preheat your oven to 375 degrees F and oil a 12 ct. muffin pan.  Stir dry ingredients into a bowl.  Stir wet ingredients into a second bowl.  Mix wet and dry, spoon into muffin pan and bake for 18 minutes (ovens may vary).  Cool on rack and enjoy.

Fruit/spices ideas:

  1. 1 c. pumpkin, 1 tsp. cinnamon, 1/4 tsp. allspice and nutmeg
  2. 1 c. mashed banana
  3. 1 mashed banana and 2/3 c. blueberry jam
  4. 3/4 c. chocolate chips (we like it in the pumpkin or banana muffins too!)

as a chef i find it hard to cook with no egg
im so glad some one out there has a simple no egg res. my family are going to love it (esp my mom who cant eat egg)

(although i added to much fruit and choc chips i found that any one who dose that add some milk. keeps the flavour and keeps it runnyer.'but take longer to cook)

Just a note...happened on your blog when I searched for no egg muffin recipes. We made this one with pumpkin and spices and it is delicious. You baled us out of a no-egg bind and we are grateful to have a new recipe for our family!

Thanks for posting this! Like Kelly above, I was in a no-egg (and no cereal, bananas, other breakfast food) bind, and was so happy to come across your post! I added half apple/half applesauce, with clove, allspice, nutmeg, and cinnamon, and my kids love them! One thing I noticed is that mine, at least, didn't rise very much, so I could've filled each tin to the top. But they were YUMMY!! Thanks again! This was helpful at just the right time.

Thank you, thank you, thank you! I was out of eggs this morning and the kids wanted muffins. I used white whole wheat flour and banana with a crumb topping. They turned out wonderfully.

Thank you for sharing this recipe. I made pineapple banana muffins topped with coconut. The batter nearly filled the muffin cups but rose to nice muffin-shaped muffins. I did have to bake them for 30 minutes with only light browning.
